BREAKFAST IN BED
Everyone knows that a good morning begins with a great breakfast. Whether you are cooking breakfast for the family on Christmas morning, or having a girl’s day with friends, creating a unique holiday-inspired breakfast is sure to please all!
Pecan Pie Overnight Oats
This healthy and light breakfast dish allows you to prepare everything ahead of time, leaving extra time for opening all of the present’s Santa left by the tree Christmas morning!
1 cup pecans, chopped
2 tablespoons maple syrup
1 tablespoon brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
Pinch of nutmeg
- For the Overnight Oats:
2 cups old fashioned oats
2 cups milk
1 teaspoon vanilla extract
• In a medium skillet, combine pecans, maple syrup, brown sugar, cinnamon, vanilla and nutmeg until toasted and well combined, about 3-4 minutes; set aside.
• Combine oats, milk and vanilla in a large bowl. Refrigerate, covered, for at least 5 hours or overnight.
• Serve oats, topped with pecan mixture.

Baked Goat Cheese & Roasted Cranberry
Baking goat cheese will revolutionize your holiday appetizers. This is the perfect party dish for 10 or 100 of your closest friends!
1/3 cup unsalted almonds
2 tablespoons balsamic vinegar
1/2 cup honey
2 cups fresh cranberries
1 tablespoon thyme
10 ounces goat cheese
• Preheat oven to 350 degrees. Spread the almonds on a baking sheet and bake for 6 minutes. Remove pan from the oven and pour the almonds into a small bowl. Set aside.
• In a medium bowl, combine the balsamic vinegar and honey. Add the cranberries and thyme to the bowl and stir until they are covered by the liquid. Set aside for 5 minutes.
• On a cutting board, chop up the almonds. Set aside 1/2 tablespoon chopped almonds and roll the goat cheese in the remaining almonds. Use your hands to mix the almonds into the goat cheese and form the goat cheese into a disc. Place the goat cheese in the center of a pie plate.
• Pour the cranberry mixture around the cheese. Sprinkle the set aside almonds on top of the goat cheese.
• Place in oven and bake for 30 minutes. Serve hot with crackers or bread.

HOLIDAY ENTREE EATS
Choosing your holiday menu is key in hosting a great party. While everyone loves holiday staples, why not choose a unique holiday entrée that guests will love.
Blueberry & Brie Turkey Wellington
This show-stopping, seasonal entrée combines a number of fresh ingredients that melt together perfectly. This dish is the ultimate cold-weather holiday entrée treat!
2 teaspoons olive oil
1 small shallot, sliced thinly
2 cloves garlic, minced
1/4 teaspoon chopped fresh rosemary
1/2 teaspoon thyme leaves
3/4 teaspoon salt
1/2 teaspoon pepper
1 boneless, skinless turkey breast
4-ounce wedge Brie cheese, rind removed
1/4 cup diced and cooked bacon
1/4 cup pickled beets, diced
3/4 cup frozen blueberries
1/2 cup cooked, crumbled bacon
1 sheet frozen puff pastry
1 egg beaten
• In a medium skillet over medium-high heat, heat olive oil. Add shallot and garlic; cook, stirring frequently, about 3 minutes.
• Stir in thyme, rosemary, 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Remove from heat; set aside to cool.
• Place the turkey breast inside a large zip lock bag. Pound until it’s nice and flat (about 3/4 – 1 inch thick).
• Sprinkle turkey with remaining salt and pepper.
• Place strips of cheese lengthwise down the center of the turkey. Add the shallot and thyme mixture, blueberries and bacon.
• Roll up the turkey to enclose the filling as well as you can. Heat oven to 400°F.
• On parchment lined baking sheet, roll puff pastry to a 15 x 10-inch rectangle.
• Place the stuffed turkey breast in the center of the puff pastry. With a sharp knife, cut horizontal slits (about 1 inch apart) on the edge of each side of the pastry dough.
• Fold each piece over the turkey breast and continue until the turkey breast is completely covered. Tuck the edges of the both sides in and pinch them well. Brush the puff pastry with the beaten egg.
• Place in the oven and cook for 70 minutes or until your meat thermometer reads 180 degrees.
• Let stand 10 minutes before cutting.

The holidays are all about spending time with family and friends, with the accompaniment of delicious treats, of course! Whether you are baking with the children or hosting a holiday cookie exchange, desserts are always welcome at any holiday gathering.
After preparing holiday dishes, a simple dessert is perfect for days you want to do a little holiday baking without spending the entire day in the kitchen. These simple four ingredient cookies are simple and delicious.
1 box white cake mix
1/3 cup oil
3 egg whites
4 oz cream cheese, softened
1/2 cup powdered sugar (optional)
• Preheat oven to 350 degrees.
• Mix all ingredients, except powdered sugar, on medium until well combined. Chill for thirty minutes. If the dough feels sticky, add 1/4 cup flour or powdered sugar.
• Take about 2 tablespoons of dough and roll into a ball. Roll dough in powdered sugar (optional) and place on a parchment-lined cookie sheet. Bake in preheated oven for 9-11 minutes, or until the tops start to crack. (Don’t let them get brown – it will ruin the “snowball” effect.
• Let cool on the cookie for a few minutes before transferring to a cooling rack. Dust with sifted powdered sugar.

Pomegranate Ginger Paloma
This recipe uses a few additional ingredients to create an extra special holiday treat for the 21+ crowd. This recipe can also be easily modified to create a kid-friendly creation, too!
Minted Ginger Syrup
1/2 cup honey
1-inch fresh ginger, sliced
8 fresh mint leaves
kosher salt, for rim
1/4 cup grapefruit juice (about half a grapefruit)
1 tablespoon lime juice
2-4 tablespoons ginger syrup (or to taste)
2 ounces silver tequila (or to your liking)
1/2 cup pomegranate juice
Ginger beer, for topping (or sparkling water)
Pomegranate arils and candied mint, for garnish (optional)
• Combine 1/2 cup water, the honey, ginger, and mint in a small saucepan and bring to a low boil, simmer 1 minute and remove from the heat.
• Cover and steep for 5-10 minutes.
• Strain and let the syrup cool. Store in the fridge.
• Rim your glass with a lime and dip in salt.
• Fill the glass halfway with ice.
• Add the grapefruit juice, lime juice, 2-4 tablespoons ginger syrup (to taste), tequila, and pomegranate juice and gently stir.
• Top with ginger beer.
